Big Sky Rye

Big Sky Rye is a blend of rye and three wheats. 10.4% protein. It, too, was developed as an artisan bread flour–which it does beautifully. Then Big Sky Rye surprised us at Christmas by producing excellent CG’s Salted Chocolate Rye Cookies and Liz’s Sourdough Pancakes. The test-baking ship has now launched into new seas.
